C’Est Magnifique!
Not the same thing as a macaroon. There IS a difference and it’s more than one “O”. Macaroons have coconut and are drop cookie. Macarons are a sandwich cookie with some serious goodness in the middle. There are actually two types of macarons: Italian and French. Italian Macs are a moody bunch. They need the right amount of air, warm sugar syrup and Harry Potter type magic to come out right. These cookies are dense and chewy.
French Macs are still complex but are more fluffy, delicate and smooth. I LOVE them. It has taken me awhile to get the technique down, but now they are one of my favorite things to make. I have gotten to play with flavors and combinations. There is much that can be done to add character and texture. I really enjoy playing around with these cookies.
